Lentil & Carrot Soup by Mike Lindner

 
Lentil and Carrot Soup

 

Ingredients

  1. 1 pound lentils
  2. 8 cups vegetable or chicken broth
  3. 1 large onion, chopped
  4. 3 garlic cloves, minced
  5. 2 teaspoons curry powder
  6. 5 carrots sliced thin
  7. 1 red bell pepper, chopped
  8. 1/2 to 1 teaspoon mushroom powder
  9. Sriracha hot sauce, to taste
  10. chopped scallion (garnish)

Directions

  1. In a large saucepan bring lentils and water to a boil and skim froth. Stir in everything and simmer, partially covered, 20-25 minutes.

The pleasure of talking about food


I came across a book the other day that really caught my eye. Of course, it was a cookbook. But, not just any cookbook... it was a cookbook of Middle Eastern cuisine.

My initial judgment is that Claudia Roden's The New Book of Middle Eastern Food is a treasure. It's almost 500 pages long. She covers not only recipes, but aspects of the religions and cultures out of which those recipes come. One of the most interesting things about the book is the fact that she includes variations on the recipes from the different Middle Eastern countries: Egypt, Turkey, Syria, Israel, Jordan, Lebanon, & North Africa (Morocco).

This book is a feast of food and culture. The book caught my eye because my wife's family is Lebanese. I get to enjoy Lebanese cuisine on a regular basis. We even prepare a few dishes at our home.

Anyway, yesterday while sitting in the library, I read the following paragraph. It reminded me so much of ourselves that I had to laugh out loud.

"...I ended up meeting some very good cooks. They explained in minutest detail the washing and the handling of ingredients, the feel, the smell, and the color of the food, but usually omitted quantities, weights, and cooking times. I learned that to some 'leave it a little' meant an hour, that 'five spoonfuls' was in order to make a round figure or because five was for them a lucky number, and that a pinch could be anything from an eighth of a teaspoon to a heaped tablespoon. They were lyrical about how delicious the dishes were, and on the circumstances in which they were prepared. It gave them, I think, as much pleasure to describe the dishes as it gave me to record the recipes" (p.5).

Dutch Babies Recipe by Mike Lindner

 
Dutch Babies

 

Ingredients

  1. 2 T butter
  2. 1/2 C flour
  3. 1 T sugar
  4. pinch of salt
  5. 1/2 C milk
  6. 3 eggs

Directions

  1. Put the butter in a 10" cast iron skillet and put it into a 425 degree oven.
  2. 2. While the butter is melting, mix the flour, sugar, salt and milk. Beat in the eggs.
  3. When the butter is melted (3-5 minutes) take out the pan, swirl it around to coat the pan, and pour in the batter.
  4. Bake for 14 minutes, until puffy and golden brown. Remove from pan and eat immediately with powdered sugar or fruit preserves on top. Serves two adults, or one 11 year old.

A Christmas Gift Idea


Yes, we are in Advent, preparing for Christ’s coming, but we are also preparing for family celebrations at Christmas. These celebrations often entail gift-giving. I don’t know about you, but I am often at a loss about what to give certain people. When I find myself at a loss, I usually just get them something that I would enjoy. And that usually works out well.

If you are wondering what to get the foodies in your life... why not get them a cookbook? I have a particular one in mind that I can recommend to you – Alton Brown's Feasting on Asphalt: The River Run. I purchased this cookbook a number of months back when Alton came to New Orleans for a book signing.

On a Wednesday evening the whole family made the 45 minute trip across Lake Pontchartrain to Octavia Books on Octavia Street in uptown New Orleans.. My kids had been begging to go to the signing. They love Alton Brown and his Food Network show Good Eats. As a matter of fact, they usually prefer to watch Food Network than to watch cartoons. I know, I have strange kids.But just look at their father!

Anyway, we made the trip across the lake and stood in line for about an hour-and-a-half. It was not easy to wait that long with three young children, but it really was worth it. It was cool to meet Alton Brown. We spoke with him for a few moments, took a picture with him, and he signed our copy of Feasting on Asphalt: The River Run. He addressed it to the kids. And they were so excited to have met him.

We ended the evening at a little hole-in-the-wall right down the street from the bookstore. Franky & Johnny’s. It’s known as a “New Orleans neighborhood restaurant” and it’s a staple of New Orleans culture. It’s been around forever and from the outside it looks like a shack. It’s actually more like a shotgun house. Walking in the front door gets you into the bar. You see lots of wood panelling. And it’s dark. The lighting is subdued in the bar area. To the left is the bar with several beers on tap and the liquor sitting on shelves right in front of a wall-sized mirror. To the right you see an antique juke box. It plays only 45’s. There is even a little space for dancing. There are two more rooms in the “house.” You have to walk through each one to reach the back of the restaurant. The tables are covered with red & white checkerboard cloths. Franky & Johnny’s specializes in seafood, but they also serve po-boys and muffulettas. But, they are famous for their seafood-stuffed artichokes. It was an awesome night.

So why do I recommend this particular cookbook?

Well, this cookbook does more than just catalog recipes. It tells a story. It chronicles Alton’s journey along the Mississippi River (from New Orleans to Missouri), a journey he made on his motorcycle. Along his route, he stops to eat in small family-owned restaurants. In one town he even ate at a church fair. He has a love for the down-home cuisine one finds in family-owned restaurants, a love he learned from his parents when growning up.

The presentation of the book is really neat. The cover is a heavy-duty cardboard. It’s colorful. And the inside looks more like a notebook or scrapbook. Lots of pictures of the food and people he met along the way. The publishers also reproduce some of the hand-written notes that Alton made on the trip. Really cool. I learned a lot reading this cookbook. A lot about culture... and food. Look it up. Here is a link to the book on Amazon.

The Catholic Foodie Episode 1 is online!


Against my better judgment, I am posting episode 1 of The Catholic Foodie: Let's talk turkey.

I am a perfectionist. Yes, really, I am. And this episode is not perfect. But, I realized earlier that I will never record a single episode if I wait for it to be perfect. So... here it goes!

Advent is here!


Yes it is here! Advent. Our yearly time of preparation for the coming of the Savior. Wreathes, Advent candles, Jesse trees, Christmas trees, special hymns and carols, Advent is a special time of the year. Over the course of the next four weeks, I will share stories and customs of Advent. I will also include links for further information.

My family loves the Advent wreath. We keep it on the dining room table and light the appropriate candles just before dinner each night. We like to say a little prayer, read a short Advent meditation, and then sing a verse of O Come, O Come, Emmanuel. We also make a Jesse Tree.

For the last few years, we have had help keeping the Advent season. My children were in the children's choir. They sang Advent and Christmas songs ALL day EVERY day. It was awesome! This year, however, the kids are not in choir. Scheduling conflicts prevented their participation. So we will have to really work on staying in the season this year. I plan on trying to incorporate evening prayer each night.

There is something else that I will be doing for Advent this year... an online Advent calendar. Sean, the "Ductapeguy" from the Catholic New Media Roundup, has organized a special media morsel for each day of Advent. Here is the promo for the Advent calendar:

Thanksgiving and Advent

Today we celebrate in the Church the Feast of Christ the King, which marks the end of the liturgical year. Next Sunday is the 1st Sunday of Advent, the beginning of a new liturgical year. It is also a very special time of preparation for Catholics around the world.

This year, in addition to beginning Advent, I am also beginning a new podcast. The first episode will be up this week. Can you guess the theme of the episode? Surprisingly enough it is Thanksgiving! Please check back this week as I will post the episode here. It will also be available on iTunes.

Today I am working on a promo for the show. I hope to complete it today and post it here as well.

The Spud Dud


Well, this is my first food-related post and it's about a culinary failure!

Last night I baked potatoes. We have been dealing with sick children for the last couple of weeks, and I figured we needed to eat some comfort food. A hot, stuffed baked potato sounded like the perfect thing. Problem was... it's been years since I've baked a potato.

In my recollection, it takes about an hour or so for potatoes to bake. But I didn't want to chance it, so I headed for Google to look it up. The first couple of hits offered the recipes for "perfect" baked potatoes. It may sound crazy to look up a recipe for baked potatoes, but, like I said, I didn't want to take any chances. We needed some serious comfort!

I cleaned the potatoes, pierced them, coated them in olive oil, and sprinkled them with kosher salt. I threw them in the oven baked them at 350F. I set the timer for one hour and started cooking the bacon, preparing the salad, and getting out all the fixings. I had planned this so that the potatoes would come out right when my wife got home from tutoring.

Wife came home, the timer went off, and I checked the potatoes. They were hard. Like bricks. Uh-oh. And the family was ready to eat.

I reset the timer for 30 minutes. I tossed the salad and heated up leftover chicken. I served the family dinner, but I did not eat. I continued to check the potatoes every 15 minutes for another hour. Finally, they were ready. That sweet baked potato smell permeated the kitchen and dining room. I felt happy. Briefly.

I announced that the potatoes were ready, only to discover that the kids were in bed and my wife was getting ready for bed. Not good. I needed comfort food more than ever! So I sat at the table, alone, with a piping hot baked potato stuffed with butter, sour cream, bacon and cheddar. I would have preferred to have my family with me. But, apparently, I bought really big potatoes!

Next time, I will allow more time for baking... or buy smaller potatoes!

Preparing to launch new podcast!


I am preparing to launch a new podcast: The Catholic Foodie.

I have a number of ideas for the show. Here I want to list some of them and ask you for your input and suggestions.

I am thinking that the show will last about 20 to 30 minutes. I hope to divide it into four segments. The first would be Catholic stuff... but I don't know what to call it yet. But in this segment I will talk about many topics (one per episode): food in the bible... passover, covenant meals, last supper, the fish Jesus ate after the resurrection, the wine at Cana, the history of beer, the particular types of wine that can be used in the Eucharistic celebration, the heavenly banquet, various catholic food / celebration traditions, biblical food concepts like the goodness of creation and meals as a symbol of communion, etc....

Another segment would be "What's cooking?" This segment would deal with listener feedback, hopefully with people sharing what they have been cooking lately or what they are planning to cook.

One segment may be about what I am cooking... so it's like "In my kitchen" or some other title.

Another segment would cover reviews of various things: restaurants, recipes, cookbooks, books about food, and possibly cooking shows....

"On tap" would include history and reviews of beers and wines.

Maybe a featured recipe each episode.

These various segments will be on a rotation. I will only cover three or four each episode. I am also thinking that it will be a weekly show.

Any thoughts? Suggestions? Please let me know your thoughts. I am very excited about this project and really want your feedback.
